Oysters. I am not able to post a link. I wanted to credit the source of my info.  It's from the Smithsonian.   Anyway it says according to Gabriella Farfan, it's also musseles and clams that can produce gem-grade pearls but commercilally.

Pearls are made by oysters, specifically the ones that live in saltwater. These creatures create pearls as protection when an irritant, such as a piece of sand, enters their shell. The oyster then covers the irritant in layers of nacre, which over time forms a pearl.
