A key lime is a type of lime that is smaller and more acidic than the more common Persian lime. It has a thin, smooth, yellow-green rind and a tart, aromatic juice that is commonly used in cooking and baking, especially in Key lime pie. Key limes are named after the Florida Keys, where they were originally cultivated, but they are also grown in other parts of the world, such as Mexico and the Caribbean.
