Brothers Clovis and Benjamin Martin opened a restaurant in New Orleans in the 20's. 

In 1929, the local streetcar workers went on strike and the brothers created an inexpensive sandwich to help the unemployed workers.

The sandwich had spare bits of roast beef and gravy served on French bread that was served out of the rear of the restaurant. 

Whenever a worker ordered the sandwich, someone would yell out on the kitchen, "Here comes one of those poor boys"!

Over time, the name transferred to the sandwich eventually becoming Po Boy, deriving from that New Orleans accent based on Cajun language.

A sandwich containing both fried shrimp and fried oysters is often called peacemaker. The Martin restaurant workers jokingly referred to the strikers as poor boys and soon sandwich themselves took on the name.

According to legend, the brothers would yell, 'Here comes another poor boy!' whenever one of the union workers entered their eatery. Since the free meal provided to these workers frequently included the traditional sandwich, the term 'poor boy' gradually came to be associated with the sandwich itself.

The name Poor Boy refers to people who had limited financial means, so the sandwich was a way to get a filling meal without spending a lot of money.
