Yes, boiling beetroot does cause some nutrients to be lost in the cooking process. Boiling beetroot can reduce its vitamin C content by up to 25%, and can also reduce the amount of folate, magnesium and manganese. Steaming or roasting beetroot is a better option to retain more of the nutrient content.

Thank you for your question. American Physiological Society (APS); May 10,2017. The study reveals that "dietary nitrate-- a compound that dilates blood vessels to decrease blood pressure". They were looking at targeting dietary nitrate as treatment option for people with cardiovascular disease. 


Well, they studied the microscopic nutrients  of beetroot juice. Raw and in liquid form. Cooking food, however, yes, beetroot, a tuber, alters the nutrients and other bioactive compounds (microbiomes) which the body tremendously benefits from in maintaining good health. (Science Daily News).

Better roast beetroot if you have to cook it. The roasting has to be controlled too.

Boiling beetroot for a long time in water will make the nutrients be lost in the water. Eating beetroot raw makes you eat most of the nutrients needed in the body.

Yes.Boiling the Beetroot,lose the nutrients.In fact,boiling any of the Vegetable and Fruit will lose it's nutrients,So,boiling of them should be avoided by everyone.

Like many vegetables the longer you cook beets, the more of the colorful phyconutrients leach out of the food and into the water.

Most of the root vegetables tend to lose their power of the vitamins and minerals if they are boiled or cooked. So they are meant to eat as raw and fresh. So may definitely lose the nutrients as you boil it. You may also have to instead eat them with the salt if you can as that tastes lot better as well.

Applying heat to food alters it's nutrient constitution and this is so in beetroot. It's better to be taken raw for optimal absorption of the nutrients.
