Content management is a set of processes and technologies that supports the collection, managing, and publishing of information in any form or medium. When stored and accessed via computers, this information may be more specifically referred to as digital content or simply as content.
It is a process  for collection, delivery, retrieval, governance and overall management of information in any format. The term is typically used in reference to administration of the digital content life cycle, from creation to permanent storage or deletion.

Digital content may take the firm of text ( such as electronic documents) , multimedia files (such as audio or video files), or any other file type that follows aa content life cycle requiring management. The process is complex enough to manage that several large and small commercial software vendors such as interwoven and Microsoft offer content management software to control and automate significant aspect of the content life cycle.

CMS is a content management system. To be more simple, a content management system is a tool that helps you in building a website without needing to code from scratch.

It is an alternative to developing your own system to create web pages, store images, and other functions, the content management system manages all that basic infrastructure stuff for you, allowing you to focus on more forward-facing parts of your website.

Apart from websites, you can also use content management systems for other functions such as document management.

There are several CMSs available online but the most popular one is WordPress and Magento since it's an open-source platform.
