Cauliflower Cheesy Soup


Tip: Use shredded cheddar cheese from the block itself as Bagged Shredded cheese contains anti-cake agent which on adding gives a grittier texture to soup.

Ingredients:- Garlic, Shallot, Cauliflower rice, Olive Oil, Water, Vegetables, Milk, Cheddar Cheese
For Taste- Salt and Pepper

Recipe
1. Take a stock pot and pour some olive oil and heat on medium heat.
2. Add Garlic and shallot and cook for about 1-2 minutes until softens and fragrant.
3. Then add cauliflower rice and water and cover it with lid to steam the Cauliflower until tender. Keep on stirring it occasionally for 5-7 minutes.
4. Once cauliflower is tender then add vegetable stock in the pot and add milk along with it. Increase the heat and bring the pot to boil.
5. Now lower the heat and simmer for 5 minutes.
6. Now turn off the heat and mix Cheddar cheese and stir it until smoothens.

Serving Tip:- Best served when hot topped with extra cheese, salt and pepper.

For Brussel Sprout Salad:

1 tablespoon olive oil

1 teaspoon chili paste

2 ounce pecans

1 ounce pumpkin seeds

1 ounce sunflower seeds

1/2 teaspoon cumin

Salt to taste

16 ounce brussel sprouts

For Lemon Dressing:

1/2 cup olive oil

1 medium lemon, juice and zest

Salt and pepper to taste

The Execution

Gather and prep all ingredient

In a frying pan on low to medium heat, heat up the olive oil and the chili paste

Add the pecans to the hot frying pan and stir well

Stir in the pumpkin and sunflower seeds. Season with cumin and salt. Saute for a few minutes, stirring occasionally, until the pecans and seeds are lightly roasted and smells aromatic

Rinse the Brussels sprouts and shave them by cutting them into thin slices with a sharp knife. Place them in a bowl

Make the lemon dressing by combining olive oil, lemon juice and zest, and salt and pepper to taste. Pour this over the brussel sprouts in the bowl and let this marinate for 10 minutes

Prior to serving, add in the pecan and seed mixture and toss to combine

Top off with additional salt and pepper if desired. Enjoy!......s.
