Are you sure there aren't stars on the captured pictures of space. I've seen a dozen of them and I can give you a list of references. 

Or maybe when you say stars, you're referring to something else other than actual stars.

Have you been in space to capture photograph with stars? Or maybe you are talking about here and you wanted to take some photos.You need to have a good camera and adjust every setting in it to capture the stars in your photo.

I'm not entirely sure what you're referencing, since there are plenty of images on the internet that have stars in them. However, I'm going to give you the benefit of the doubt and assume that you haven't quite figured out your camera yet.
You'll have to adjust your camera setting in order to see the stars in the sky properly. This is because stars are little speck of light, and if your camera is still in "Day Mode" (it brightens the picture to make the objects look clearer), then those stars will just be blotted out by the extra light your camera uses. In order to see them, you need to dim down your camera - turn off flash and go into "Night Mode". This way, the stars show up clearer against the dark background of the sky.

There are some telescope that allow you to make use of the lens and then you can easily capture the galaxies and other different celestial objects in space. It all depends on the lenses that are powerful enough to capture the stars.

It is a simple answer to this matter.  Stars are considered dim and they do not produce enough light to be captured in photos.

It is very difficult to capture clear or focused stars unless you have a specialized telescope and equipment. The star Trail is the easiest type of starry night photography you can do.

Stars are typically too faint to be seen in photographs captured in space. The exposure times used to capture these images are typically too short to capture the faint light of stars.

Stars are incredibly bright, and most cameras and telescopes used to capture photographs in space are calibrated to capture faint objects and details. The very long exposures needed to capture stars would likely wash out any other details in the image.
