Eggplants are not only purple in colour. They have other variants that are milk in colour and green. Eggplants are packed with essential nutrients like iron, potassium, calcium and magnesium. They also contain bioflavonoids and fibre that are good for one's healthy.

The eggplant isn't always purple and does come in a range of different shapes and sizes and even colors. Maybe where you are from they mainly sell the large dark purple ones in your market called black beauty. These seem to be the most popular in the markets. However, where I'm from more people here will buy the long Chineses eggplant which is a very light purple color. This seems to be the one that is popular for cooking with fish here on the islands.  I believe this is because many people cook a lot of Chinese dishes and this is why they buy this one the most. 

Eggplants are rich in fiber and low in calories and this is one of the major benefits of eating eggplant. You can actually eat this daily without any health problems at all. 

There are so many dishes you can make with eggplant it isn't even funny. This is in the squash family and can be used the same as squash when cooking.

Here are a few things you can make with eggplants:

  1. Bakes in the oven with seasoning and cheese
  2. Made like french fries dipped in a batter and fried.
  3. Cut up and cook with steak, fish, or even chicken in a stir-fry.
  4. Eggplant casserole.

I grow egg plant in my backyard and there are different color variations. I grow purple and green eggplants. I like fried egg plants with friend rice. I also like egg plant pickle. I know a couple of eggplant dishes. I might try some of yours.

I only see purple ones that are long but there are varieties of sizes of eggplant and in some country, it does have lots of color and even a color green, I saw one in a video. Eggplant contains lots of fiber and it became a staple vegetables in our country. I love it when it is cooked with egg. We can fry it too and sometimes we will just steam it, cut it and host it with different steamed vegetable, put on a vinegar and it is ready to serve. On the one that it is cooked, we smoked it first, then we beat an egg and fry it with egg. I love that one. I grow as a person with that kind of cook for eggplant. When it is fried, we will only cut the eggplant in cubes and fry it. Sometimes we cover it with egg and bread crumbs. It will be really crispier and it is good for children too.

Eggplants do not only appear in purple color. They may also be in deep green, light green, pink, purple with green stripes or streaks, green with violet streaks or patches and white. According to a book of Postharves Biology, written by Mohammed Siddiqui, anthocyanin impacts the violet and purple coloration the same way chlorophyl does with green color.

In our country, eggplant is commonly cooked as eggplant omelette. As the name implies, we just basically mash the eggplant to a bowl with beaten egg, and then fry it. Preparing this dish is very easy.

Eating eggplant has a lot of benefits. For one, the anthocyanins found in the skin of the eggplant is said to be rich in antioxidant, fiber, potassium and magnesium. Polyphenols in eggplant have also been shown to have anti-cancer effects.

I have only come across the purple colored ones and luckily enough purple is my favorite color. This also makes me enjoy it so much. Thanks for sharing now am so much informed.

The color of the eggplant depends on the kind of soil is being planted. We say that it is purple for it is the common variety of eggplant. 

Eggplants can be cooked in various style of cooking. They can be grilled and fried them with scrambled eggs. We call it torta in our dialect.

Its purple color because it has anthocyanin, it's same as carrot that has beta carrotene. All the eggplant fruit can be eaten even raw. Raw eggplant fruit can be mixed with tomato and chilli sauce (we usually make traditional diy sauce). It can be also stir fried with any other ingredient, such as  tofu, egg, seafood, chicken.

I do love egg plants so much. I use it in chicken stews, beef stews, lamb and pork. Sometimes I can cook it in steamed cabbages. Other times I can bake it together with eggs and pepper to be eaten in bread sandwitches.
