Traditionally, idli is made using rice and lentils. But during the grinding stage, you can add any vegetable you want and make it more nutritious. Personally I have seen red coloured idli which is made by adding beetroot during grinding stage. But usually idly is consumed with samber and samber itself has all the vegetables.

Yes you can:

Prepare the batter with yogurt, suji and water. Add veggies (veggies of your choice). Add spices and then cook for 5 mins. Enjoy Idlis with curry of your choice,in the sambhar or with tomato chutney.

Yes, you can add veggies to idlis to make them tastier and more nutritious. Idlis are a traditional South Indian dish made from a fermented batter of rice and lentils. Adding veggies is a great way to enhance the flavor, texture, and nutritional value of the idlis. Here are some popular veggies that can be added to idlis: Grated Carrots: Carrots add a natural sweetness and a pop of color to idlis. Simply grate the carrots and mix them into the batter before steaming. Chopped Spinach: Spinach adds a mild flavor and lots of nutrients to idlis. Simply chop the spinach and mix it into the batter. Finely Chopped Onions: Onions add a subtle sweetness and a bit of crunch to idlis. Finely chop the onions and mix them into the batter. Grated Zucchini: Zucchini adds a mild flavor and moisture to idlis. Simply grate the zucchini and mix it into the batter. Finely Chopped Bell Peppers: Bell peppers add a sweet, slightly tangy flavor and a pop of color to idlis. Finely chop the bell peppers and mix them into the batter. Experiment with different veggies to find the combinations that you like best. Keep in mind that adding veggies to the batter may affect the cooking time, so you may need to adjust the steaming time accordingly.
