It depends on what type of greens you want to plant. For Spinach, arugula, claytonia, mizuna, and winter lettuce you would plant in colder climates around late October.

The best season to harvest vegetables is summer when they can grow in much better weather and not too cold which will let most plants die.

Greens grow year-round in areas with mild summers and winters, such as the West Coast. For most other areas, spring and fall are the best times to grow greens. Greens can be sown directly in the garden starting in spring and, in cool areas, planted throughout the summer until September. If you want to get a jump on the season, start seeds four to six weeks before the last frost date in your area so they can be planted two to three weeks later.

The best time to grow green vegetables depends on the specific vegetables and the climate. Most are cool-season crops, planted in spring or fall, while some like green beans, cucumbers, and zucchini are warm- season crops planted in late spring or early summer.

Most leafy vegetables can be planted as early in spring as the soil can be worked. The soil is ready for tilling and planting if a handful of soil crumbles when you squeeze it. If the soil forms a muddy ball when you squeeze it, the soil is still too wet and will form hard, long-lasting clods if you work it.

Green vegetables are typically best grown in the spring and early summer months. Depending on your location, the best time to plant green vegetables may be different. For example, in colder climates, it may be best to wait until the soil has warmed up before planting.

Green veggies are grown all throughout the year but if you ask me the best time to grow green veggies then it is the winter because many farmers do this to stop their crops from being frozen in the cold so they rip them out and sell them.
