This is the easiest pasta recipes that I make. Just cook the pasta al dente as you do for other kinds of pasta dishes. Prepare white sauce as usual, I prefer to add a little sugar to the white sauce as it balances the salt from cheese and also gives a nice creamy taste. Keep this ready at hand.
Chop some veggies such as zucchini, carrots, bell peppers, either only green bell peppers or a mix of the green, yellow and red peppers. You can even use mushrooms if you like. Chop an onion finely. One or two cloves of garlic, crushed. Heat oil and add chopped onions, saute until they turn translucent. Then add garlic and saute for a minute. Next, add the veggies one by one and keep stirring for a few minutes, until they are slightly cooked and still have that crunch. Then add white sauce and mix well. Lastly, add pasta and give a quick stir. Adjust salt, herbs as per your taste. Garnish with cheese. You won't even have to add cheese if you are thinking of cutting down the calories.
