The only letter that does not appear in the periodic table is the letter "J". 

All of the elements in the periodic table are represented by one or two-letter symbols, with the exception of the recently added element 118, which is represented by the temporary symbol Og. However, there is no element symbol that uses the letter "J". 
The reason for this is that the letter "J" is not commonly used as a symbol for any chemical element, and it does not represent any common element name or property.
