Tuber crops are staple-energy sources, which are second to cereals, and are generally cultivated in tropical regions of the earth. They are usually short and thickened and typically grow below the soil. They are largely composed of starch-storing tissue, known as parenchyma. 

There are two basic types of Tuber crops. Such as- root tubers are swollen roots of the plants, constituting an important source of carbohydrates to humans. They are composed of starch that is deficient in other essential nutrients particularly in proteins. Beet, carrot, parsnip are the few examples of root tubers. 

Stem tubers are swollen stems of plants, which forms thickened rhizomes (underground stems). Ginger, potatoes and sunchokes are some examples of stem tubers. 

The main differences between the two are- stem tuber mainly store complex carbohydrates such as starch and root tubers mainly store simple carbohydrates such as glucose.
