Leafy vegetables: spinach, kale, lettuce, collard greens, bok choy, cabbage, and mustard greens are often eaten for their leaves.
Fruiting vegetables: tomatoes, cucumbers, bell peppers, and eggplants are often eaten for their fruits.
Others: Some vegetables like broccoli, cauliflower, and Brussels sprouts are eaten for their flower buds, while celery is consumed for its stem, and carrots are eaten for their roots.
