Boiled potatoes have high carbs in it. And it also has resistant starch in it, a kind of starch that won't by the body. The most part of carbohydrates in potatoes are converted into resistant starches which helps in resisting digestion. As a result of these resisting starch and high carbs in it,  potatoes suppress hunger quickly for a long period of time.

Resistant starch in potatoes will decrease while boiling. But it will gain more resistant starch again if allow it to cool.

The high resistant starch and high carbs in potatoes make one feel fullness of stomach fast and thus stop one from high intake of food. So a plan of eating boiled potatoes to gain weight will  work not  the work as the way you think. Instead it may loss your weight in certain conditions.

Carbohydrates do not make you fat.

Eating potato or any type of carbohydrates rich food, won't automatically make you fatter. However, If you are watching your weight, enjoy potatoes in moderate quantities and be careful of how you eat them.

Boiled potatoes can assist in weight loss. But when eaten in excessive amounts, they can cause weight gain. Though potatoes are a satiating and nutritious vegetable, some studies suggest that eating them more than four times a week can lead to an increased risk of developing high blood pressure and Type 2 Diabetes.

Boiled potatoes, when consumed in moderation and as part of a balanced diet, are not likely to result in significant weight gain. In fact, boiledpotatoes have a low glycemic index, which means they have a minimal impact on blood sugar levels and can help you feel fuller for longer periods.

Potatoes are a healthy carbohydrate option that provides important nutrients such as fiber, vitamin C, andpotatoes can actually be a healthy addition to most diets due to their high fiber content, vitamins, and minerals.

However, weight gain occurs when a person consumes more calories than their body is burning. If potatoes are consumed in excess or in combination with high-calorie toppings such as butter, cheese, or sour cream, then they can contribute to weight gain.
